3/4 c. sugar 2 eggs 1 tbsp. melted butter 1 tsp. vanilla 1 tsp. grated lemon rind 1/3 c. flour 1/4 tsp. baking powder Pinch of salt 2 2/3 c. flaked coconut In large bowl, combine sugar, eggs, butter, vanilla and lemon rind. In small bowl combine flour, baking powder and salt; mix well. Stir into sugar mixture and blend well. Stir in coconut and drop by tablespoons onto well greased and floured cookie sheet. A cherry or nut may be placed on top of cookies before baking, if desired. Bake at 325 degrees for 15-18 minutes until lightly browned. Remove to waxed paper and cool. Store in airtight container. Makes about 2 1/2 dozen cookies. |
