OATMEAL COOKIES 
1 cup butter
1 cup brown sugar, firmly packed
1 cup white sugar
2 eggs
1 1/2 tsp. vanilla
1 1/2 cups sifted flour
1 tsp. salt
1 tsp. baking soda
3 cups quick cooking oats
1/2 cup chopped nuts
1/2 cup raisins

Soak raisins in warm water until plump.

Beat together butter and sugar. Add eggs and blend in well. Add vanilla.

Sift together flour, baking soda and salt. Add oatmeal (uncooked). Add nuts. Add raisins.

Shape mixture into a roll and wrap in wax or freezer paper. Refrigerate overnight.

The next day, slice into 1/2 inch slices and bake in a preheated 375F oven for about 9-12 minutes or until browned lightly on edges - do not overbake, centers should still be soft.

Remove to cool on a wire rack for 10 minutes. After cookies have cooled, spread cookies with confectioners icing if desired.

Makes 50-60 cookies.
