“JUNIPER TILAPIA” IS IN:
NEXT RECIPE:  LOBSTER BISQUE SOUP

JUNIPER TILAPIA 
4 tablespoons butter
1 medium shallot
15 juniper berries
2 tilapia fillets
1/4 cup flour
dash salt

Crush juniper berries to a course texture. Thinly slice the shallot.

In a medium sized frying pan melt butter over medium heat. Add juniper berries and shallots. Sauté until shallots are transparent.

Meanwhile dredge tilapia lightly in the flour and salt. Place tilapia fillets on top of sautéed shallots and juniper berries. Let cook for about four minutes. The fillets should show golden brown edges.

Turn the fillets over allowing any of the shallots and juniper berries that adhere to the fillets to remain on the fillets. Cook for another four minutes.

Transfer each fillet to a plate and evenly pour any remaining butter, bits of shallot, and juniper berries over the top of the fillets.
