COCONUT CUSTARD PIE | |
2 tbsp. melted butter 1/4 c. cornstarch 3/4 c. sugar 1/2 tsp. salt 2 c. milk 3 egg yolks (save whites for meringue) 1 tsp. vanilla 1 c. coconut In saucepan blend melted butter, cornstarch, sugar and salt. Gradually add milk. Heat to boiling while stirring over direct heat. Remove from heat and stir in slightly beaten egg yolks. Return to heat and cook 2 minutes, stirring constantly. Add vanilla and cool thoroughly. Stir in coconut and pour into baked pie shell. Meringue: Beat 3 egg whites until foamy. Add 1/2 cup sugar gradually and continue beating until glossy and stiff peaks form. Put on pie and put in 400 degree oven 5 minutes or until slightly browned. |
