FRENCH COCONUT PIE 
3 eggs
1 1/2 c. sugar
1 tsp. vanilla
1/2 c. butter
1 c. coconut
1 unbaked pie shell

Bake pie crust 1 minute at 400 degrees. Beat eggs slightly; add other ingredients. Pour into pie crust. Bake 10 minutes at 400 degrees. Reduce heat to 375 degrees and bake 15 minutes. Reduce heat to 350 degrees and bake for 20-30 minutes until it is light brown on top.
