ZUCCHINI AND ONIONS WITH
MOZZARELLA
 
3 tbsp. butter
3 c. (3 med.) sliced 1/8 inch zucchini
1 c. (1 med.) sliced 1/8 inch onion
1/4 tsp. oregano leaves
1/2 tsp. basil leaves
1/8 tsp. salt
1/2 tsp. minced fresh garlic
1 med. ripe tomato, cut into wedges
1 c. (4 oz.) shredded Mozzarella cheese

Makes 6 servings. Prep and cook time, 30 minutes.

In 10 inch skillet melt butter over medium heat. Add remaining ingredients except tomato and cheese. Continue cooking, stirring occasionally, until zucchini is crisply tender (7-10 minutes). Add tomato wedges; sprinkle with cheese. Cover; let stand 2 minutes or until cheese is melted.

Microwave Directions: In 2 quart casserole, melt butter on High (30-45 seconds). Add remaining ingredients except tomato and cheese. Cover; microwave on High, stirring after half the time, until zucchini is crisply tender (3 - 4 1/2 minutes). Add tomato wedges; sprinkle with cheese. Cover; let stand 2 minutes or until cheese is melted.

Since microwave ovens vary in power, you may need to adjust your cooking time.
