ZUCCHINI AND ONION CASSEROLE 
4 c. sliced unpeeled zucchini
1/2 c. chopped onion
1 c. sour cream
1 can cream of chicken soup
1 med. carrot, grated
1/2 c. melted butter
1 c. croutons

Boil together zucchini and onion for 5 minutes in salted water. Drain.

Mix sour cream, soup and grated carrot.

Pour 1/2 cup melted butter over 1 cup croutons. On bottom of buttered casserole, put 1/2 of dressing, zucchini and soup mixture. Layer. Bake about 30 minutes at 350 degrees.
