ZUCCHINI CASSEROLE 
3 lbs. Italian sausage
6-8 green squash
2 garlic cloves
Oil (coat pan)
4-5 peppers
2 sm. onions
1/4 c. Parmesan cheese
Spaghetti sauce
Mozzarella cheese

Ground beef can be substituted for sausage or use half and half.

Oil bottom of pan and add meat and brown. Par boil squash (cut up), garlic, peppers and onions (sliced). Then add to browned meat. Simmer until tender. When soft add 1/4 cup Parmesan cheese and spaghetti sauce to cover. Simmer 20 minutes. Just before serving put into casserole dish. Cover with Mozzarella cheese and put in 350 degree oven until cheese melts.

Serves 8 to 10.
