APPLESAUCE CAKE 
1/2 c. shortening
1 c. brown sugar, packed
1 egg, beaten
1 c. fresh or canned applesauce
1 3/4 c. sifted cake flour
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
3/4 c. seedless raisins

Cream butter until soft. Blend in brown sugar. Add egg, beating until light. Stir in applesauce. Mix and sift dry ingredients, combine with raisins and stir into first mixture. Turn into greased 8-inch loaf pan. Bake in a moderate 350 degree oven about 45 minutes. Cool and frost with a cream cheese frosting.

CREAM CHEESE FROSTING:

Beat together 2 (3 oz.) packages cream cheese, 1/8 teaspoon salt and 1/4 cup of milk. Blend in about 3 cups confectioners' sugar, enough to make of spreading consistency.
