CARROT CINNAMON BREAD 
3/4 c. safflower oil
3/4 c. granulated sugar
3/4 c. brown sugar
2 eggs, beaten
1 tsp. vanilla
2 c. flour
2 tsp. cinnamon
1 c. carrots, ground
1/2 c. chopped nuts
1 tsp. baking powder
1/2 tsp. salt

Mix all ingredients and pour into greased pan. Bake at 350 degrees for 1 hour.
