CINNAMON CARROT BREAD 
3/4 c. sugar
1/4 c. brown sugar
3/4 c. oil
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 eggs, beaten
1 c. grated carrots
1/2 c. chopped nuts
1/2 tsp. vanilla

Beat sugars and oil. Combine with dry ingredients. Gradually add eggs; stir in carrots, nuts and vanilla. Pour in greased 9 x 5 inch loaf pan. Bake 60 minutes at 350 degrees. Let stand 10 minutes.
