ORIENTAL DIPPING SAUCE FOR
DUMPLINGS, SHU MAI, ETC.
 
1/3 c. dark soy sauce
3 slices ginger, minced
2 tsp. Oriental sesame oil
1/2 tsp. sugar
1/3 c. rice vinegar
3 cloves garlic, minced
1 tsp. chili oil

Combine all ingredients and let stand 10 minutes to blend.

This recipe tasted good. I did not have any sesame oil, so I left it out. I thought it was a little too tagny, so I added about another teaspoon of sugar. I will make this again.
This is a good recipe to experiment with.

Try adding less than half of the rice vinegar, then taste. I warmed on the stove with chopped scallion and additional sugar, then used water to double the total amount of liquid. Then it was similar to dipping sauce in Asian restaurants.
