JONAH'S APPLE CAKE 
1 c. brown sugar
2 eggs
1/2 c. vegetable oil
1 tsp. vanilla
4 med. apples, grated
1 3/4 c. flour (can be whole wheat)
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg

NOTE: This is very easy if you just grate the apples whole, working around the core.

1. Beat sugar and eggs together until thick and light. Beat in oil and vanilla. Add grated apples.

2. Sift dry ingredients together (flour, baking soda, salt, spices) and fold into apple mixture.

3. Pour into oiled and floured "brownie" pan (8"x8" or 9"x9").

4. Cook until knife inserted in center comes out clean (or a broom straw or toothpick). This will be about 40 to 45 minutes at 350 degrees. This is a very moist dark cake so don't cook it too dry. It is even healthy enough to eat for breakfast.
