VEAL SCALOPPINE 
1-2 lbs. veal, thin sliced

Dip in: 1/2 tsp. salt 1/4 tsp. pepper

Brown veal in 1 tablespoon butter in shallow fry pan. Add 1/2 pound mushrooms, sliced (or 1 - 6 oz. can). Saute mushrooms with veal until brown. Remove veal and mushrooms to hot platter. Add to fry pan: 1/4 c. red madeira wine

Cook only few minutes, pour over veal. Sprinkle 1 tablespoon parsley and 1 tablespoon white tarragon vinegar. Serve with fettuccine. Serves 4.
