DIABETIC APPLE PIE 
4 c. sliced apples
1/2 c. apple juice concentrate
1-1/2 to 2 tsp. tapioca (or cornstarch or flour)
1/2 tsp. lemon juice
1/2 to 1 tsp. cinnamon
1 to 2 tbsp. melted butter (optional)

Mix ingredients together. Pour into a prepared pie pastry. Cover with pastry and seal edges. Bake at 425 degrees for 15 minutes or until crust is brown. Reduce temperature to 350 degrees and bake until center is bubbly and apples are cooked, about 30 minutes.
