SOUTHERN SPOON BREAD 
2 c. white cornmeal
2 c. boiling water
1 tsp. salt
3 tbsp. melted shortening
1 1/2 c. milk
3 eggs, separated

Sift cornmeal 3 times and mix with boiling water, stirring until smooth and free from lumps. Add salt, shortening, milk and beaten egg yolks. Beat whites until stiff but not dry and fold in. Pour into greased baking dish and bake at 350 degrees for 45 minutes. Serves 8.
