PISTACHIO PUDDING CAKE 
1 pkg. white cake mix
1 pkg. pistachio pudding (instant)
3 eggs, slightly beaten
3/4 c. oil, I use Saffola (calories you know)
1/2 c. coconut
1/2-1 c. walnuts or pecans, chopped
1 c. 7-Up

Mix together well, use electric mixer. Bake at 350 degrees for 45-50 minutes in 13 x 9 x 2 inch pan.

ICING:

2 env. Dream Whip (1 pkg. contains 2 env.)
1 pkg. instant pistachio pudding
1 1/2 c. milk or water (milk is better)

Beat until stiff. Spread on cooled cake and top with 1/2 cup coconut and 3/4 cup chopped walnuts or pecans.
