CHICKEN BREASTS WITH LEMON AND
CAPERS
 
1/4 c. flour
1/4 tsp. black pepper
1/2 tsp. paprika
2 skinned, boned chicken breasts, halved, pounded to 1/4 inch thick (about 1 pound)
5 tsp. corn oil
1/4 c. low sodium chicken broth
2 tbsp. lemon juice
2 tbsp. capers, drained

Combine flour, pepper and paprika on a plate. Press the chicken breasts into mixture, coating evenly and shaking off any excess. Heat the oil over moderately high heat for 1 minute. Add chicken and cook 3 minutes on each side; do not over cook. Transfer chicken to a heated platter. Add broth to pan, scraping any browned bits on the bottom. Stir in lemon juice and capers and heat through. Pour sauce over chicken. Serves 4.

This recipe was great. I added a couple tablespoons of butter to the lemon and capers, which made the sauce richer.

This recipe was absolutely amazing. I cut it in half to feed just one, but added a little extra lemon juice, chicken broth and capers. I also let it all simmer together for a minute. It came out beautifully.

Very good... and more importantly, simple. I used one thick chicken breast sliced in half lengthwise instead of pounding it to 1/4". Cooked the chicken a bit longer since it was thicker than 1/4", and added aprox 1 tsp of chopped garlic, let it brown. Followed the rest of the recipe pretty much to the letter, adding 1/2 teaspoon of parsley just before serving. Smeared some pasta in the sauce before putting on a platter, and added a dash of parm-reggiano. VERY nice.
