30 DAY FRIENDSHIP BRANDIED FRUIT
CAKE
 
You need a glass gallon jar, always slant lid on jar, don't cover completely.

2 1/2 c. sugar
1 qt. sliced canned peaches with juice

Combine and stir daily for 10 days.

Tenth day, add:

20 oz. can crushed pineapple plus juice

Stir daily.

20th day, add:

2 (9 oz.) jar maraschino cherries, drained

Don't add juice. Stir daily 10 days. All fruit should be cut up and cherries quartered.

30th day: You can bake the friendship cake. You will need 3 bundt cake pans or bake 2 at a time. Each cake needs:

1 box cake mix, yellow or white (no pudding type)
2/3 c. Wesson oil
1 c. pecans or walnuts, do not cut up
4 eggs
1 box instant pudding mix dry

Mix together and pour into greased and floured bundt cake pans. You can make 3 bundt cakes with all this fruit. Bake at 350 degrees for 55 minutes. I use loaf pans. Keep brandied juice in glass gallon jar, do not put lid on tight. Always be sure to keep 1 1/2 cup juice for you to start over. Give rest to friends.

GLAZE:

If desired, enough for 3 cakes.

1 box powdered sugar
1 stick soft butter

Mix together; frost while warm. Cake will fall a little when taken out of oven, don't be alarmed.
