IMPOSSIBLE COCONUT PIE 
1 1/2 c. flaked coconut
1 tall can condensed milk
1/3 c. water
1/8 c. sugar
1/2 tsp. cream of tartar
1/4 c. butter
4 eggs, beaten
1/2 c. flour
1 tsp. vanilla
Pinch of salt

Butter the bottom of a 10 inch glass pie plate. Spread the bottom with coconut. Place all other ingredients in the blender. Blend well on high. Carefully pour over the coconut. Make sure all coconut is moistened. Bake at 350 degrees for approximately 35 to 40 minutes or until lightly browned and firm. Serve at room temperature or chilled. Surprise! It forms its own crust.
