APRICOT SQUARES 
1 c. sugar
1/2 stick butter
1 egg
2 tsp. baking powder
2 c. plus 1 tbsp. flour
1 tsp. vanilla
1 pkg. shredded coconut
12 oz. jar apricot jam
1/2 c. chopped nuts

Cream sugar and butter well. Add egg, flour, baking powder and vanilla and mix this well. This will be thick and stiff. Add coconut and nuts; spread 3/4 of the mixture on a well greased and floured 13 x 9 x 2 inch pan. Add the apricot jam on the top then add the remainder of the dry mixture. bake for 35 to 45 minutes at 350 degrees. Cut into squares when cool.
