COUSIN KAREN'S APRICOT SQUARES 
2 sticks butter
3/4 c. sugar
1 egg yolk
2 c. flour
3/4 c. finely chopped walnuts
1 tsp. vanilla
12 to 16 oz. apricot preserves

Preheat oven to 350 degrees. Cream butter and sugar together. Add egg yolk and vanilla. Stir in flour and nuts. Spread 1/2 of dough into 9 x 13 inch ungreased pan lined with plastic or wax paper. Pull out dough on liner. Spread remaining dough directly into pan. Cover with jam. Invert dough covered liner so dough covers jam. Peel off liner. Bake 40 to 45 minutes until brown. Cool in pan and cut into squares.
