CARROT CAKE | |
4 eggs 1/2 tsp. salt 1 1/4 c. cooking oil 1/3 c. buttermilk 1 tsp. vanilla 3 c. finely grated carrots 1 1/2 c. sugar 3 c. cake flour 2 tsp. baking soda 1 tsp. cinnamon 1 c. chopped walnuts Beat eggs; add sugar. Add remaining ingredients, mix until well blended. Bake at 300 degrees for 1 hour and 30 minutes or until done. TOPPING FOR CARROT CAKE: 1 stick butter, melted 1 box confectioners' sugar 1 (8 oz.) cream cheese 1 c. pecans, crushed Mix all ingredients and frost cake. |
