CURRY RICE SALAD 
1 box chicken flavor Rice-A-Roni
1 sm. jar marinated artichoke hearts
5 green onions
1/2 c. red or green pepper, chopped
Fresh mushroom slices (optional)
Black olive slices (optional)

DRESSING:

1/2 c. mayonnaise
1/2 tsp. curry powder

Cook Rice-A-Roni according to package directions and let cool. Drain artichoke hearts and chop. Combine all ingredients. Add dressing and chill.
