CREAM OF WILD RICE SOUP 
1 c. uncooked wild rice
3-4 c. water or chicken broth
1 tsp. salt (omit salt if using broth)
1 lg. onion, diced
1 rib celery, diced
1 carrot, diced
1/2 c. butter
1 c. flour
8 c. chicken broth
Salt and white pepper to taste
1 c. half and half

Wash wild rice and drain. Boil in water or broth, simmer 40-50 minutes.

Saute onion, carrot, celery and ham in butter about 3 minutes. Add flour a little at a time, stirring until flour is blended in well but do not brown. Slowly add chicken broth, stirring until all the mixture is blended.
