BEST EVER APPLE PIE 
1 1/2 c. flour
Dash of salt
1/2 c. shortening
1 1/2 c. shredded cheddar cheese, sharp natural
4 to 6 tbsp. cold water
6 c. peeled apple slices
1/2 c. honey
2 tbsp. flour
1/2 tsp. cinnamon
2 tbsp. butter

1. Combine flour and salt; cut in shortening until mixture resembles coarse crumbs. Stir in cheese. Sprinkle with water while mixing lightly with a fork; form into ball. Divide dough in half. On lightly floured surface, roll 1/2 to 12 inch circle. Place in 9-inch pie pan.

2. Toss apples with honey and combined dry ingredients. Place in pastry shell; dot with butter. Roll remaining dough into 12-inch circle; place over apple mixture. Seal and flute edges of pastry; cut slits in top. Bake at 425 degrees for 35 minutes.

VARIATION: Substitute 1/2 cup whole wheat flour for 1/2 cup in crust.
