3 lg. (8 oz.) cream cheese, softened
1 c. sugar
4 eggs
2 tsp. vanilla
Vanilla wafers
Cherry or blueberry pie filling
Cupcake papers

Beat (approximately 5 minutes) with electric mixture. Place vanilla wafer flat side down in cupcake paper inside muffin tin. Spoon cream cheese mixture on top of wafer about 2/3 full. Bake at 350 degrees for 15 to 18 minutes. Top with pie filling, if desired. Makes 3 dozen.
