SEA FOOD CASSEROLE 
1 1/2 c. chopped onion
2 c. chopped celery
1 lb. haddock or cod
1 lb. scallops
1 can of any one of the following: crab, lobster, shrimp, or mushrooms
1 can oysters
1/2 c. butter
1/2 c. flour
3 c. milk
Salt
Pepper
4 slices cheese or 1 c. shredded cheddar

Simmer onion and celery in 3 tablespoons butter until soft. Cut cod in 1 inch cubes. Poach cod and scallops in milk until soft. Use milk to make white sauce, adding butter, flour, and cheese. Stir until creamy. Add vegetables and canned fish and poached fish. Top with bread crumbs and grated Parmesan cheese. Makes 2 casseroles. Bake at 350 degrees for 30 minutes. Freezes well. Serves 8.
