SEA FOOD CHOWDER | |
1/4 lb. finely diced salt pork (or bacon) 2 lg. onions, chopped 4 c. diced raw potatoes 3 c. hot water 1 bay leaf 1/2 tsp. freshly ground black pepper 1/4 tsp. thyme 1 lb. firm white fish (cod, haddock, halibut), cut into 1" chunks 1 lb. med. shrimp, shelled & deveined 1 qt. low fat milk Salt to taste (opt.) Saute salt pork in large kettle (about 5 minutes). Add onions and saute until onions are tender, but NOT brown. Add water, potatoes, bay leaf, pepper and thyme. Bring to boil, reduce heat and simmer, partially covered, about 10 minutes. Do not overcook potatoes. Add fish, shrimp and cook until fish flakes easily and shrimp is opaque. Remove bay leaf, add milk and salt. Heat to boiling, stirring as needed and serve. Serves 8 to 10. |
