SEA TANG CHOWDER 
2 lobsters, boiled
1 lb. Bay scallops
1 lb. crab meat
8 soft shells med. clams, steamed and shelled
1 lb. mushrooms
1 qt. Grade A milk
1/2 lb. shrimp
2 tbsp. butter
2 tbsp. flour
1 pt. cream
Salt and pepper
Few grains cayenne
1/2 c. sherry or 1/2 c. white wine

Cut the lobster meat into small pieces. Simmer the scallops and crab meat and the soft part of the clams and mushrooms in the milk, with several pieces of lobster shell. Boil the shrimp separately and shell.

Melt the butter, blend in the flour; add the cream and seasonings. Then add the other ingredients and the milk in which they were cooked. Remove lobster shells. Finally add the sherry or white wine.
