SWEET POTATO CASSEROLE 
4-5 med. sweet potatoes, canned
1 1/2 sticks butter, room temperature
3/4 c. sugar
Dash of salt
3 eggs, beaten
1 tsp. vanilla
1/4 c. evaporated milk

TOPPING:

1 1/2 c. Cornflakes, crushed
1/2 c. brown sugar
1/2 c. chopped pecans or walnuts

Grease casserole dish. Drain and mash sweet potatoes. Put into casserole dish. Add softened butter, sugar, salt and beaten eggs. Add vanilla and evaporated milk. Mix thoroughly. Combine topping ingredients. Sprinkle on sweet potato mixture. Bake 30 minutes at 350 degrees.
