LEMON BUTTER 
I love this spread on sliced date and nut bread.

3 lemons, grated and juiced
3 eggs, beaten lightly
2 c. sugar
1 heaping tsp. butter

Grate rinds of 3 lemons and add juice. Beat together eggs and sugar; add butter. Cook about 3/4 hour in top of double boiler, stir occasionally. Keep in refrigerator.
