MEAL IN A CASSEROLE 
1 lb. ground beef
1 tbsp. or more fat
1 clove of garlic, minced
1 c. chopped onions
1 green pepper, diced
1 tsp. chili powder
1 tsp. salt
3/4 c. uncooked rice
1 (15 oz.) can redpack tomatoes in puree or 2 (8 oz.) cans
1/16 oz. can kidney beans

TOPPING:

1/2 c. grated Cheddar cheese
1/4 c. chopped ripe olives

Brown meat in fat. Add garlic, onions, green pepper, chili and salt. Saute 5 minutes and remove from heat. Add tomatoes, sauce, kidney beans, and raw rice. Pour into greased 2 1/2 quart casserole.

Bake covered at 350 degrees for 1 hour. Then sprinkle with cheese and olives. Return to oven uncovered. Bake 15 minutes. Serves 8.
