FRESH APPLE CAKE 
2 lg. eggs or egg substitute
1 c. oil or 3/4 c. oil
2 c. sugar
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
4 c. peeled apples, sliced thin
1 c. nuts, optional

Beat eggs and oil until creamy. Add dry ingredients and mix. Fold in apples. Bake in 9 x 13 inch pan 35-40 minutes at 350 degrees. May add glaze while hot.

GLAZE:

1 c. confectioners' sugar
1 tsp. soft butter
Milk to spreading consistency
