1 1/4 - 2 c. sugar 1 c. oil Blend well with mixer. Beat in 4 eggs (I use 3 lg.) 1 tsp. vanilla 3 c. flour (I use whole wheat pastry) Beat well - batter will be heavy and sticky. Grease 11x18 cookie sheet - size is important (mine is 11x17). Spread 3/4 of batter into sheet and fill corners well. (May use more of remaining batter if needed. Spoon 1 jar cherry pie filling carefully over batter. (Other type fruit filling okay) Dot remaining batter over cherries so they peek through. Bake no more than 25 minutes at 350 degrees. Cool and sprinkle with confectioner's sugar just before serving if desired. Cut into squares. |
