VELVET WAFFLES 
2 c. sifted all-purpose flour
3 tsp. double action baking powder
3/4 tsp. salt
2 tbsp. sugar, optional
3 eggs, separated
1 3/4 c. milk
1/2 c. Wesson oil

Sift flour, baking powder, salt and sugar together into bowl. Beat egg whites stiff enough to stand in peaks. Beat egg yolks. Add milk and oil; pour into flour mixture. Beat until smooth. Fold in egg whites lightly but thoroughly. Bake in hot waffle iron. Makes 7 or 8 waffles.
