SAVORY CHEESE MEATLOAF 
1 1/2 lbs. ground beef (extra lean)
1/2 c. bread crumbs (fine)
1 egg
1 tsp. salt
1/2 tsp. garlic powder
1 (8 oz.) can tomato sauce
1/2 c. Ricotta cheese
2 oz. Blue cheese

Mix all of the first 5 ingredients and only 4 ounces of the tomato sauce together thoroughly. Form in a rectangular shape about 1/2 inch thick on wax paper. Then spread 1/2 cup Ricotta cheese and sprinkle 2 ounces of Blue cheese evenly over this. Roll into a roll and bake at 350 degrees for about 50 minutes; pour the remaining 4 ounce of tomato sauce over top of meat loaf and return to the oven for another 5 minutes.
