CHUNK O' CHEESE MEATLOAF 
1 1/2 lbs. ground beef
1/4 lb. (4 oz.) mushrooms, chopped
1 med. onion
3/4 c. dry bread crumbs, crackers or croutons
1 egg
1 1/4 tsp. salt
1/4 tsp. pepper
3/4 c. milk
1/2 lb. (8 oz.) extra sharp cheddar cheese or chunks of American cheese

Blend meat with chopped mushrooms, onion, bread crumbs, egg, salt, pepper and milk until well blended.

Dice cheese into 1/2 inch cubes, blend into mixture by hand, make sure to distribute evenly.

Pack into a 9x5x3-inch loaf pan. Bake at 350°F for 1 to 1 1/4 hours. Pour off liquid. Cool slightly before cutting.

I love this recipe. I leave out the mushrooms and onions. Instead, I add an extra 1/4 c. bread crumbs. And, rather than using chunks of cheese, I use 1 c. shredded cheese. This is such a moist, yummy meatloaf!
