ITALIAN MEAT LOAF 
1 1/2 lb. lean ground beef
3/4 c. Italian bread crumbs
1 egg
1 c. chopped onion
16 oz. tomato sauce
1 tsp. oregano
2 c. shredded mozzarella cheese

Combine ground beef, bread crumbs, egg, onion, 1/3 cup tomato sauce and oregano; mix well. Place mixture on wax paper or foil and shape into a flat rectangle (10 x 12 inch). Sprinkle cheese evenly over mixture, then roll it up, starting on the long side, like a jelly roll.

Place in shallow baking dish. Bake at 350 degrees for 45 minutes. Pour remaining tomato sauce on meat loaf and bake 15 minutes longer.
