PICANTE SAUCE 
1 gal. chopped tomatoes
1 bell pepper, chopped
1 lg. onion, chopped
1 tbsp. salt
1 tsp. sugar
1/4 c. vinegar
1-2 jalapenos or to taste, chopped

Peel tomatoes and chop. Add all ingredients and boil in a large pot until most of the juice is boiled out. Pour in hot sterilized jars and seal. Makes approximately 6 pints.
