APPLE - CARROT QUICK BREAD | |
1 1/2 c. peeled, shredded apple 1/2 c. shredded carrots 1/2 tsp. lemon extract 1/4 c. butter 2 eggs 1 3/4 c. flour 2/3 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1/2 c. coconut or chopped nuts Heat oven to 350 degrees. Grease 3 x 5 inch pan. Blend first 5 ingredients. Add remaining except for coconut. Stir in coconut and pour into pan. Bake 50-60 minutes. |
