CREAMY POTATO PUFF 
1 (8 oz.) pkg. cream cheese, softened
4 c. hot mashed potatoes
1 egg, beaten
1/3 c. onion, chopped finely
1/4 c. pimento (optional)
Season to taste

Combine cheese and potatoes, mix well. Add remaining ingredients. Place in buttered 1 quart casserole. Bake at 350 degrees for 45 minutes. (Note: you can top with cheese, bread crumbs, etc. or you can substitute, on top only, Durkee fried onion rings in place of the onions in casserole.)
