BOLOGNA ROAST 
2 lbs. bologna (in 1 piece)
1 sm. onion
Oil
Salt
2 tbsp. flour
2 c. water
1 c. ketchup

Cut the bologna in wedges, bake in oven until brown at 350 degrees. While bologna is baking, in a skillet brown 1 small onion with a dab of oil. Add 2 heaping tablespoons of flour. Do not brown. Add 2 cups of water and ketchup to make gravy. Salt to taste. Pour over bologna. Simmer 10 minutes.

Put in bake and cut hash marks in the top
Baste with a mixture of orange juice, orange rind, and brown sugar. Bake for about 1/2 hour at 350°F.
Cool slightly, cut into slices, and re-baste with sauce. Good warm or on sandwiches.

I like to bake mines in Hennessy baked at three fifty for a hour and half. Goes well with a nice Schlitz malt beverage.

That's how I like to marinade mine with Hennessy. With a dime of rock ground up in it for that extra added zip.

I take mine and put it in a turkey pan, slow cooked, for 4 hours, at 250°F. I mix ketchup and Heinz 57 sauce and baste it every hour. Cut up bell pepper and onion and roast it with the bologna. Gives it a nice flavor. Also works with 3", 6", and 9" butts of bologna. Adjust cook time accordingly. So tender you can cut it with a fork! My favorite food with any small batch burbon. 5 stars!

Jamaican Jerk Bologna Roast
Get a BOAR'S HEAD log of bologna. Make slight incisions in the rind. Heaping dry rub of jerk seasoning. Wrap in banana leaves. Skewer and roast over open pit, low and slow. Serve with fried plantains and a Piņa Colada. Great for all your new Reggae album listen parties!
