POTATO CASSEROLE 
2 lb. frozen hash brown potatoes
1/2 c. melted butter
1 tsp. salt
1/2 tsp. pepper
2 tbsp. minced onion
1 can cream of chicken soup
1 pt. sour cream
2 c. grated Cheddar cheese
Cracker or bread crumbs or cornflakes

Thaw potatoes thoroughly and mix with all other ingredients. Pour into buttered casserole (3 quart or 13 x 9 inch dish). Top with buttered crumbs. Bake 45 minutes to 1 hour at 350 degrees.
