SIAM'S PANCAKE MUFFINS 
1 egg, beaten
1 3/4 cups milk
1/3 cup oil
1 tsp. salt
4 tsp. baking powder
2 cups all-purpose flour

Preheat oven to 375°F.

Beat the egg in a bowl. Add the milk, oil, salt and baking powder and mix a little. Then slowly mix in the flour.

I then grease a muffin pan. I'd say the muffins are about 1-2 inches wide and 1-2 inches tall. It's a small muffin pan. I fill each hole about half way.

Put the muffins in the preheated oven and bake for 11 minutes.

Cook's Notes: This is actually a pancake recipe and I just decided to bake them. Believe it or not, I now like pancake muffins better than the normal ones! I've also experimented with this recipe with the normal thing to do - add blueberries, but I've also poured a little Kahlua on top of each one before it is baked. I've also poured vanilla and also sprinkled cinnamon sugar on top of each one. All are great. I noticed though that the ones sprinkled with cinnamon sugar are crispier on the outside but moist inside.
