SCOTCH SHORTBREAD 
3/4 c. plus 2 tbsp. butter, softened
1/4 c. sugar
2 c. flour

Heat oven to 300 degrees. Mix butter, sugar and flour using a pastry blender. Roll dough 1/4 to 1/2 inch thick and cut with cookie cutters. Blend until set, about 10 minutes. Works well with cookie cutters because it keeps its shape. Try adding 1/2 teaspoon almond flavoring or vanilla or 1 ounce melted chocolate for variety. Using 1/4 cup cocoa also works but reduce the flour by 1/4 cup and add 2 tablespoons sugar.
