ECKLES CAKES (ENGLISH) 
5 c. sifted flour
Add 1/4 tsp. baking powder
Add 1/4 tsp. salt
Cut in 1 lb. lard
Add ice water to form pastry
1 lb. currants, wash if necessary, drain

Roll pastry to 1/4 inch. Cut into 3 inch squares. Mix currants with small amount of granulated sugar. Place small amount of currants in center of each pastry square. Cover currants with the 4 corners of the pastry, lightly roll top to make smooth. Bake in hot oven. Sprinkle with powdered sugar.
