APPLE WALNUT RAISIN COFFEE CAKE 
3 1/4 c. whole wheat pastry (minus 1 1/2 tbsp.)
1 3/4 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. butter
1 1/2 c. honey
2 1/4 tsp. vanilla
3 eggs
1 1/2 c. sour cream
3 apples
1/2 c. raisins
1/2 c. chopped walnuts
1 1/2 tsp. cinnamon

1. Sift dry ingredients together and set aside.

2. Cream butter and honey.

3. Add vanilla.

4. Add eggs one at a time and beat well.

5. Add dry ingredients alternating with sour cream.

6. Peel and slice apples into 16 sections.

7. Add apples to raisins, walnuts and cinnamon. Mix well.

8. Add apple mixture to batter.

9. Sprinkle with walnuts on top.

10. bake 50-60 minutes at 350 degrees. Test by placing knife in and pulling out clean. Delicious!
