SUPER SHRIMP CASSEROLE 
1 stick butter
1 c. onions, chopped
1 c. celery, chopped
1 c. bell pepper, chopped
4 cloves garlic, chopped
1 tbsp. parsley, chopped
1/2 c. green onion tops, chopped
3 c. shrimp, cooked and peeled
3 c. cooked rice
1 can cream of mushroom soup
3 slices white bread soaked in milk
Bread crumbs
1/2 c. hot water

Saute onions, celery, bell pepper and garlic in 1 stick butter. Add parsley and onion tops, soup, shrimp, rice, bread and hot water. Season to taste. Cook 8-10 minutes. Pour into 2 quart casserole. Top with bread crumbs and pats of butter. Bake at 350 degrees for 30 minutes. Serves 8-10.
