SOPA DE MAIZ (MEXICAN CORN SOUP) | |
3 1/2 c. fresh or frozen corn kernels 1 c. chicken stock 1/4 c. butter 2 c. milk 1 garlic clove 1 tsp. oregano 1 sm. can Ortega minced green chilies 1 to 2 whole chicken breast, cooked, boned and cubed 1 c. Monterey Jack cheese Combine first seven ingredients in a blender or food processor or puree. Then simmer slowly; add salt and pepper to taste. Add chicken and cheese; heat through slowly so cheese doesn't curdle. Serve with plain Doritos and lots of Pace Picante sauce; sour cream, too. Bueno! |
